Frying:

Frying is to cook by total or partial immersion in fat which is heated to between 145-220°C. As tasty as it is quick!

Helpful Tips

  • Dry the meat on absorbent kitchen paper prior to cooking to prevent spitting when adding to the pan with oil.
  • When shallow frying, heat the oil on a moderately high setting, add the meat and seal on both sides. Turn the heat down to a moderate setting and cook for the remainder of the cooking time.
  • Unsaturated vegetable oils such as sunflowers are ideal. 15ml should be sufficient for shallow frying.
  • Olive oil may be used to give a distinctive flavour to dishes.
  • A splatter guard is useful for preventing hot oil spitting out of the pan.
  • Drain the meat on a kitchen paper prior to serving to remove any excess oil.

The Chinese method of stir-frying is an ideal and quick way of cooking meat. Stir-fry strips of meat until brown. Add a selection of vegetables, fruit or chopped nuts and an accompanying sauce. The meat should be tender and the vegetables crunchy. Stir frying is third on the list of the 5 of the best lamb cooking methods.

Dry-frying is also a healthier method of frying where only the melted fat from the meat is used. This is ideal for meats such as mince and sausages. Ingredients:

  • Ground Lamb
  • Red onions, diced
  • Garlic, minced
  • Olive oil
  • Spices – black pepper, cinnamon, ground cloves, cumin, ground coriander and white pepper

Instructions:

  • In a large skillet over medium high heat, add the olive oil. Once hot, add the diced onions and cook for 3-4 minutes until softened, stirring continuously
  • Add the crushed garlic, and cook for a further minute or so, then add the minced lamb.
  • Cook for a minute, breaking apart any clumps of meat with a wooden spoon, cooking, a good 6-8 minutes until lamb is all cooked through and brown with no pink bits remaining. Keep stirring and breaking apart clumps of meat- you can even use a potato masher to break the meat apart a little.
  • If desired, drain any extra fat. Add all the spices (seven spice or all spice, cinnamon, salt and black pepper) and stir to combine. Taste the mince and adjust for seasoning.
